GRANDMA'S GERMAN POTATO SOUP WITH SAUSAGE
Ingredients
1 lb German bratwurst sausage. Note (1)
2 ea Potatoes, peeled and cut into large chunks
1 ea Onion, peeled and halved, cut into long strips
2 cup Water
1 head Cabbage, cut into long strips
3 cup Milk, divided
3 Tbsp Flour
4 oz Swiss cheese, cut in small cubes. Cubed slices work well
Note (1) Italian sausage or regular pork sausage works well also.
Directions
Cook and crumble the sausage in a skillet. Drain well and discard the fat. In the same large pot, place the sausage, potatoes, onion and water. Bring to a boil and when it boils, reduce the heat to simmer and cook for 20 minutes, or until the potato is just done.
Add the cabbage, return the pan to the boil, reduce the heat and cook for another 20 minutes.
Add 2 ½ cups of the milk and heat slowly to just under the boil. The milk will burn on the bottom of the pan if you try to do this to fast.
Meanwhile, mix the 3 tablespoons of flour with the ½ cup of milk, (use a little extra milk for this if it is to thick) and when the pan with the milk is hot, stir in the flour and milk mixture. Get all of the lumps out of the flour and milk before hand because they will not cook out later.
When the mixture in the pot thickens, add the cheese and stir off and on as the cheese melts. Serve hot with chunks of good crusty bread.
