NEW CHICKEN SALAD

This is a recipe that I tried out on everyone at my house and people liked. The wife and I loved it and we ate most of it in one day. We thought that it was real good and the flavors went together nicely. It's basically leftover chicken which is stripped from the bone and mixed with avocado and star fruit, which has a light lemony taste and you dress it with a lemon and olive oil dressing flavored with basil and Dijon mustard. Anyway here's how I made it, and don't leave the mustard out. It may sound weird, but it tastes real good.

The Dressing

Put all of these ingredients in a small jar with a screw lid, put the lid on and shake it to mix. It will turn a creamy light yellow color. Set aside for a few minutes to meld the flavors.

1 tsp Basil, dry or 1 tablespoon of fresh, chopped
1 tsp Dijon mustard
1 ea Lemon, juiced, no seeds
4 Tbsp Extra virgin olive oil


The Salad

2-3 Cups Boned chicken. Pull the chicken into bite size pieces by hand
1 ea avocado, peeled, sliced and cut into chunks
1 ea Star fruit. Wash it, cut it length wise to remove the seeds and slice it.


Put every thing into a bowl that will hold it and toss to mix. Add the dressing over the salad and stir to mix. This will keep the avocado from darkening and give the flavors time to meld together. If you can't find star fruit, try papaya, pineapple chunks, apple and so on. Let me know how you and/or your families liked it.
