SHRIMP SCAMPI
Ingredients
1 ½ Lb Raw shrimp, peeled and deveined, tails on or off
2 Tbsp Olive oil or butter
2 Tbsp Lemon juice
½ ea Onion, finely diced
1 ea Cloves garlic, crushed and finely chopped
1 Tbsp Parsley, finely chopped
Directions
Heat a large pan over medium low heat. Add the oil and let come to heat. Add the onion and garlic. Stir and saute until the onion becomes clear. If the onion burns, the fire is too hot.
This will take about 5 minutes.
Add the shrimp to the pan, turn the heat to high and stir fry until the shrimp are all red. Reduce the heat. Add the lemon juice and finely chopped parsley and stir just to warm. Serve with rice and Buddhas delight which is listed under the main dishes section.
