CHICKEN WITH HOMINY
This is a recipe that just came to me one day and I put it together. This dish goes together fast and cooks quickly in the microwave oven. It has been a favorite of ours for some time now and we hope that you enjoy it as much as we do.
Ingredients
1 Can Hominy (29 oz for three people)
3 ea Chicken breast, skinned and boned (The legs and thighs also may be used, but have a higher fat content)
1/4 tsp Tarragon
1/4 tsp Fenugreek, (you could use Cumin, cardamom or Curry powder here)
1/8 tsp Garlic, fresh, crushed and chopped very fine
1/4 tsp Lemon-Pepper, or lemon herb (Spice Mix found in the spice section in grocery stores)
1 tsp Italian oil and vinegar dressing (I use Good Seasons)
Directions
Open can of hominy and place in a strainer or colander. Wash the hominy under cold water and allow to drain.
Place the drained hominy in the bottom of a micro wave safe covered dish. Eight inch round dish works well. Add fenugreek and garlic powder to hominy and mix well. Place the chicken on top of the hominy and sprinkle on the lemon & pepper (or herb) seasoning, garlic powder to taste, tarragon and drizzle the Italian dressing over the top of the chicken. The chicken pieces cook better if they don't quite touch each other. Place the cover or a piece of microwave wrap over the top of the dish. Bake in the microwave on sensor cook, chicken, or on medium high to high for 10 to 12 minutes. Chicken should be 185 degrees minimum internally when it is done, or cut one of the pieces open. If it is not pink inside and the juice runs clear, the chicken is done.
