Pat's Oatmeal Cookies

This is the recipe that pat got from her mom and modified it for the kids when they were growing up. O.K. I admit it. I ate a lot of them myself and really enjoyed them. We now have permission from Pat herself to put up this recipe just in time for the summer doldrums. Keep watching this recipe on the web as it will be expanded and added to later on.

Ingredients

3/4 cup shortening (I used butter)
1 cup brown sugar
1 egg
1/4 cup water (I used orange juice)
1 tsp vanilla

In large bowl, beat butter and sugar until creamy, add the egg, water and vanilla and beat until well mixed.

1 cup flour (I used whole wheat)
½ tsp baking soda
1 tsp cinnamon
3 cups rolled oats
1 cup raisins (I used chopped mixed fruits)
1 cup chopped nuts (I used walnuts)

In another bowl, mix flour, soda and cinnamon until well distributed. Add the rest of the dry ingredients and mix well.

Add the dry ingredients to the wet ingredients and mix well. Drop by spoonfuls to greased cooky sheet (they do not spread very much).

Bake at 350 F 12 to 15 minutes.
