FROZEN BANANAS
This easy to make-ahead snack is a "kid-pleaser". There's more nutrition in them than in the frozen pops from a box. I will usually make up a whole batch of these at one time because when the kids come over they go really fast. This is also a fun project for the kids to do in the kitchen when it's really bad outside. Enjoy!
Ingredients:
The quantities listed below will do twelve frozen bananas.
6 ea Banana, peeled and cut in half across the middle
1½ cups Milk
3 cups Fine crumbs. ( See #1 below for preparation of crumbs )
3/4 tsp Ground cinnamon
1/2 tsp Nutmeg
12 ea Ice cream sticks
Directions
#1 Use graham crackers, ginger snaps, chocolate snaps, Grape Nuts or any of your kids' favorite cereal or cookies. Crush enough to make three cups of crumbs. Place the cookies in a food processor and pulse until they are fine, or place the cookies in a cloth or plastic bag and pound them and then roll them with a rolling pin to break them up. If all else fails, use a mortar and pestle to crush the cookies.
#2 Insert an ice cream stick deeply into the cut end of each banana.
#3 Dip the banana in milk (or fruit juice concentrate) and roll in cereal crumb/spices mixture.
#4 Wrap in plastic wrap, such as Saran, and freeze.
Suggestions
Try dipping the bananas in chocolate that has been melted over boiling water and then sprinkle the dipped bananas with nuts or little pieces of candy before wrapping and freezing them.
