ORANGE SURPRISE
Ingredients
1 box Silken tofu
½ cup Orange juice concentrate (right from the can. Do not add any water)
¾ cup Sugar
1 tsp Orange zest, use fresh only or rehydrate dry with a little orange juice and heat in the microwave
1 pkg Unflavored gelatin
½ cup Cool water
2 Tbsp Gran Marnier, orange liqueur (optional, but it gives a great taste)
can of Mandarin orange sections
Small package of low fat or no-fat Cool Whip
Directions
To dissolve the gelatin in the ½ cup of cool water put the water in a microwave safe dish, sprinkle the gelatin on the cool water and heat it in the microwave to dissolve. Let it set for a few minutes.
Put the tofu, sugar and orange juice concentrate into the food processor and blend until it is smooth. Add the dissolved gelatin, Gran Marnier and zest and process just to mix. Place in the icebox to chill until it is firm. Add and fold in a small box of Cool Whip dessert topping. Fold and gently stir until the white cool whip lumps are all gone. Spoon into dessert glasses and decorate the tops with the Mandarin orange sections (four sections to each glass, laid out in a flower petal fashion). When serving, add a small blob of Cool Whip on top of each glass and stick a sprig of fresh mint in the top of the Cool Whip.
Note: You can adapt this recipe using other fruit juice concentrates or nectars and garnishes, such as apricots, peaches, pineapple, cherry or you pick the fruit and go from there.
