PEANUT BUTTER CHOCOLATE CHIP COOKIES

Ingredients

1 stk Butter, room temperature
½ cup Sugar, white
½ cup Sugar, dark brown
3/4 cup Peanut butter
1 cup Flour
3/4 tsp Baking soda
1 ea Large egg
1 tsp Vanilla extract
6 oz Bitter sweet chocolate

Directions

Pre-heat the oven to 350 degrees.

Place the butter and both sugars in a mixing bowl and cream them together until they are smooth and have a golden color. Add the egg and vanilla and mix. Add the peanut butter and mix well. Sift the flour and baking soda together and add to the mixture a little at a time while stirring until it is all added (this can be done by hand also). Turn off the mixer, remove the beaters, and then add the chocolate chips and mix them in using a spoon. Form the dough into balls about the size of a golf ball and place them on a cookie sheet. Flatten the balls with a fork. Leave plenty of room for them to spread out. Don't crowd them on the cookie sheet. Bake the cookies for 18 to 20 minutes. They should have a nice, light brown color and will have spread out on the cookie sheet. If they aren't quite done, they will break easily when you try to remove them from the cookie sheet. If this happens, bake them a little longer. Place them on a wire rack to cool and guard them so that there will be some left for dad when he gets home.

Option:

When you add the chocolate chips, add three ounces of roasted peanuts and mix them in at the same time. You can use dry roasted, regular roasted or you can use raw peanuts if you happen to have any in the house.
