CHOCOLATE CHIP COOKIES
Chocolate chip cookies are loved by everyone far and wide. It has even been rumored that for some children, the first word that they ever uttered was "choco chip". Most people nowadays just go to the store and buy a package of chocolate chips for their cookies, but before they were so widely popular, moms had to spend all day dribbling melted chocolate onto greased pans to create the chips just to get ready to bake the cookies. The following recipe is guaranteed to have the kids following you all over the house.
Ingredients
3/4 cup Butter or margarine (1 1/2 sticks)
3/4 cup Raw sugar, (light brown)
3/4 cup Packed dark brown sugar
2 ea Eggs
2 tsp Vanilla
1 1/4 cup Oat flour, (may use white, but oat adds a softness)
1 cup unsifted whole wheat flour
1 tsp Baking soda
1 cup Chopped nuts or walnuts*
2 cup Semi-sweet chocolate chips
Directions
Heat the oven to 375F. In a large mixer bowl, cream the butter with sugar first, then add the eggs and vanilla. Pull mixture down off the sides of the bowl with a spatula several times. Mix the flour and baking soda together, and gradually add into the creamed mixture. Stir in nuts and the chocolate chips by hand after all of the flour is in.
Drop by teaspoon onto an ungreased cookie sheets. Bake at 375F for 9 to 11 minutes or until golden brown.
This will make about four dozen 2 1/2 inch cookies. These cookies are delicious when eaten warm while the chocolate is still soft.
To reheat the cookies in the microwave, process two or more cookies for 15 to 20 seconds. Baked cookies or dough may be frozen in a tightly covered container or plastic bag.
* These nuts may be omitted or the same amount of oatmeal may be substituted without affecting the cookie texture.
