BANANA BREAD
This is one of those recipes that have been in my family since I was just a little kid and almost too small to look over the counter. I know that some of you won't believe that I was ever this small, but it is true. I have watched my maternal grandmother make this many times and enjoyed it more each time. Try it with a little cream cheese or just some butter. It's great.
Ingredients
½ cup Butter or margarine
1 cup Brown sugar
2 ea Eggs
1½ cups Mashed bananas
2 cups Flour
3 tsp Baking powder
½ tsp Salt
1 tsp Ground cinnamon
1/8 tsp Ground cloves
1 cup Raisins
½ cup Chopped walnuts, (I like these best, but most nuts will work)
Directions
Beat the butter, brown sugar, whole eggs and bananas together until they become a light golden yellow. This may be done with a mixer to save time. In a separate bowl, combine the flour, baking powder, salt, cinnamon and cloves and mix them together. Add slowly to the creamed butter and sugar while the mixer is still running or stir in by hand in small batches. Stir in the raisins and walnuts until just mixed.
Pour into a greased and floured 9 by 5 inch loaf pan. Bake at 350°F for 60 minutes or until a toothpick inserted in the loaf comes out clean and the top is a nice brown color.
